Semifreddo Cake is a fresh and delicious dessert ideal for summer composed of a biscuit dough base and a creamy layer of chocolate , cream and condensed milk that once in the freezer takes on a consistency similar to Ice Cream Cake . A unique delicacy that can be decorated as desired and personalized in many variations !
For the super easy and super fast recipe I took inspiration from my beloved Chocolate Semifreddo , in this case giving it the shape of a cake and using a layer of biscuit that I had available and completing the surface with curls of dark chocolate and white chocolate.
But if you want, you can create many other flavors and bases, preparing new semifreddo cakes each time depending on the occasion. I have written all the possible combinations. The only thing to be careful about is respecting the hours of rest in the freezer.
So that you can easily cut the slice! The semifreddo cake is tasty to serve both as a snack and as a dessert at the conclusion of a dinner , it is a exceptionally convenient choice to keep in the freezer ready to serve for the arrival of friends and unexpected guests .

Instructions
- First of all, line a springform pan with cling film and then add the biscuit dough disc to the base.
- Then mix the condensed milk with the sifted cocoa in a bowl
- Finally add the perfectly whipped cream and mix with slow movements from bottom to top until the mixture is perfectly blended.
- At this point, add the chocolate chips and mix them well into the mixture:
- Finally, pour the chocolate mixture onto the biscuit base, level it well and place in the freezer for approximately 3 hours.
- Be careful, the time may be longer. Remember that the mixture must be cold and solidified.
- Once cooled, untie the pan, take out the semifreddo cake and remove the film from the edges and base.
- Place the dessert on a serving plate and decorate as desired, in this case with a border of chocolate curls made from a dark chocolate bar and a white chocolate bar.
- Keep at room temperature for at least 10 minutes before serving.

As for the base, you can replace the biscuit with dry biscuits , butter and honey that are usually used for cheesecake . Or with a layer of ladyfingers lightly soaked in coffee or even just water or even wafers .
As for the creamy layer, you can decide to make a Strawberry Semifreddo Cake , or a Coffee Semifreddo Cake, or a Pistachio Semifreddo Cake , or a Nutella Semifreddo Cake , or even a Yogurt Semifreddo with fresh fruit.
Finally, remember that you can customize the decoration as you prefer , in addition to the chocolate chips, you can add pralines, sweets, smarties, biscuits, meringues, fresh or dried fruit.
