It is made with Mozzarella or pieces of mozzarella first breaded with flour then in egg and breadcrumbs and finally cooked in boiling oil ; where the typical crunchy shell is formed that encloses a stringy and warm heart of melted mozzarella ! After various experiments , today I share with you what I consider the perfect recipe for fried mozzarella ! for its crunchy consistency that does not open during cooking , as well as being easy and quick to make ! For the preparation you can use mozzarella that you prefer: cut it into pieces , leftovers , or as in my case mini mozzarella balls . The final result does not change.
The 2 secrets for a perfect result are: draining the mozzarella (whatever type and size you use) and double breading ; which will give you a thick shell that will not break during cooking! Excellent freshly fried! both alone and accompanied with tomato sauce as in my case; together with potato croquettes , olives in a crust , arancini , fried polenta and supplì the aperitif is served! Also excellent as an appetizer ; or as a second course together with a tasty seasonal side dish! Try it soon and you will not buy it again !

Fried Mozzarella Recipe
Ingredients
Quantity for 15 pieces
15 mozzarella balls or 200g mozzarella to be divided into 3-4cm cubes
2 eggs
’00 flour or gluten-free
breadcrumbs
salt
First of all, drain the mozzarella thoroughly, patting it dry with a cloth so that it is not damp.
Then coat the mozzarella well in about 2 tablespoons of flour, immediately after coat it in the egg and finally in the breadcrumbs.



Once you have completed the round, make the double breading by passing it again in the egg and then in the breadcrumbs to have a very thick shell:

Finally, heat a tall-sided pan with plenty of frying oil and fry a few pieces at a time when it reaches temperature.
Let them cook for about 3 minutes, turning them every now and then, until they are golden. If necessary, lower the heat because they must not be burnt, but light. Drain on absorbent paper, then sprinkle with salt and serve very hot.

In this case I accompanied it with a sauce made with blended tomato pulp, basil, oil, salt and a pinch of oregano cooked for 15 minutes in a pan.

Once breaded you can keep it in the fridge or freeze it and then cook it directly frozen!
Once cooked it is delicious if eaten immediately, hot and stringy!
