The Cheeseburger is a typical American dish ; it is a meat hamburger covered with melted cheese , finally served inside a sesame seed burger bun, enriched with salad , tomato , cucumbers , onion , a touch of ketchup , mustard and/or mayonnaise ! A unique delicacy that was born in New York around 1930 , then spread throughout the world , today among the most loved, those of Mc Donald’s , Burger King ; where we also find it with double meat , taking the name of Double Cheeseburger ! Like any traditional preparation, there are different versions . The one I’m giving you today is the original Cheeseburger recipe that I’ve perfected after several years of experiments . It’s an easy preparation , just follow a few rules : first of all choose quality burger buns, even better if homemade ; for the meat medallion I recommend minced heifer or Chianina that is not too lean ; it gives more flavor; which vegetarians can replace with a chickpea burger .

For the cheese, the classic recipe calls for sliced ​​Cheddar , the typical orange color , available in all supermarkets; alternatively you can use slices of thin cheese that you prefer. Finally for the filling: fresh lettuce , sliced ​​salad tomatoes and pickled cucumbers ; in this case instead of chopped raw onion , I chose to add caramelized onions , which gave it an extra boost making the Cheeseburger amazing ! The artichokes in oil are also delicious !     How to make cheeseburger

  1. First of all, make the meat medallions following the 
    HAMBURGER  procedure
  2. I recommend the shape and thickness with a height of at least 1.5 cm because they are tastier.
  3. Then cut the hamburger buns in half, place a drizzle of mayonnaise on the base if you like, then place the salad leaves so that they are slightly protruding from the base and finally add 1 slice of cucumber for each bun, 2 slices of tomato cut to a thickness of 4 mm for each bun:
  4. At this point you can decide whether to add a drizzle of ketchup, if you like, and another lettuce leaf.
  5. finally you can cook your burger. My advice is to cook it on a cast iron grill/plate, it holds the heat perfectly. Alternatively you can heat a non-stick pan.
  6. The secret to perfect cooking is to heat your griddle for at least 5 minutes (10 minutes if you use cast iron)! Make sure it’s very hot! Otherwise they’ll fall apart.
  7. Then place the burgers on a hot griddle and cook over medium-high heat for 2 to 4 minutes per side (depending on the tool you use and the thickness!)
  8. Only when the typical golden crust has formed and the hamburger comes off easily can you turn it over! If you see that it is still sticking or you have trouble detaching it, leave it for a few more seconds, perhaps lowering the heat a little. Avoid squashing the meat, otherwise it will be tough.
  9. Within 5 minutes they will be medium rare.
    Finally, 1 minute before the meat medallions are finished cooking, place the hamburgers still cooking on the grill, the cheddar, 1 slice on each piece and leave to soften for a few seconds:
