Air Fryer Meatballs are a very tasty second course , a light and quick alternative to prepare meatballs ; which despite being vegan, cooked without oil will be soft inside with a nice golden crust . Believe me, they are truly amazing!
For the quick and easy recipe I took inspiration from my most loved preparations: the mixture of Meatballs in sauce , in fact you will need 10 minutes to mix together the minced beef and pork, eggs, softened bread and cheese, round them between your hands and finally cook the meatballs in the air fryer.
Thanks to the trick inherited from the Baked Meatballs , of adding 2 tablespoons of broth during cooking, these will not dry out (due to the air fan) resulting in them being tender on the inside but crunchy on the outside. To give you an idea, the result is incredible, have you ever heard of the delicious Fried Meatballs ?
They are practically the same, but without the frying ! Perfect to prepare as a second course to save dinner or lunch , needless to say that children eat them over and over like sweets and we adults follow suit! And if you want to combine them with an excellent quick side dish, also make the Potatoes in the air fryer , they are special! If you make them smaller, they are also special as an aperitif accompanied by a delicious sauce.

Equipment
- 1 air fryer that I use for my preparations
Ingredients
Quantity for 20 pieces
1/2 onion
2 cloves garlic
9 oz (250g) ground beef
3.5 oz (100g ) Italian mild sausage
1 egg
1/2 cup (30g) Panko bread crumbs
2 tablespoons (30g) grated Parmesan cheese
1/4 cup fresh Italian parsley
1/2 teaspoon fine sea salt
3.5 tablespoons (50ml) milk
extra virgin olive oil
black Pepper
How to make meatballs in the air fryer
first of all, soak the bread in hot water, a few minutes will be enough, then mainly extract the crumb, squeeze it well and add it to a bowl.
Then add the minced meat, crumbled sausage, egg, Parmesan, milk, finely chopped parsley and a little salt.
Finally, knead with your hands until you obtain a compact mixture.

Roll balls of about 5 cm in your hands. But you can also make them smaller:

Then, as you make them, place them in the basket of your air fryer with some chopped rosemary and 2 tablespoons of broth, with oil if you like:

Without preheating, cook at 180° for about 15-18 minutes, the time also varies depending on the size of the meatballs.
Shake halfway through cooking and decide whether to add another 1 tablespoon of broth.

Conservation
You can also keep them for the next day, perhaps heating them up a little at the time.
